SANTA BARBARA, Calif. – Mar Monte Hotel, part of The Unbound Collection by Hyatt brand, today announces the appointment of Sean Conway as Executive Chef. In his new role, Conway will oversee the hotel’s two restaurants, costa Kitchen & Bar and Café Lido, as well as other culinary initiatives on property from weddings and events to culinary programming and partnerships.

As one of his first initiatives as Executive Chef, Conway looks forward to launching a new artist dinner series kicking off this summer with local Santa Barbara artist, Jay Fisher. Fisher is responsible for several of the large-format artworks throughout Mar Monte Hotel, including the elaborately painted floral walls of Café Lido, and a colorful mural behind the hotel check-in desk. The upcoming dinner series, titled, “Art After Dark” will included an art tour and curated, art-inspired multi-course dinner with cocktail pairings.

Conway’s extensive culinary career spans over two decades. Prior to joining Mar Monte Hotel, Conway was Executive Sous Chef at Kimpton Canary Santa Barbara, and before that served as Executive Sous Chef of Chumash Casino Resort in Santa Ynez Valley. Previously, Conway also held various head chef positions throughout California including Executive Chef at Hotel Erwin, Banquet Chef and Bel-Air Bay Club and Executive Sous Chef at Hotel Casa del Mar. Conway’s past experience also includes chef roles at Bellagio Vegas and Four Seasons Hotel New York. He also served as sous chef at Craft Restaurant by Tom Collichio prior to that.

In his free time, Conway likes hiking, golfing and playing tennis. He enjoys trying new restaurants, and also loves to barbeque and cook for his friends and family.
