Following Beloved Executive Chef, Jean-Pierre Dubray’s Retirement, The AAA Five-Diamond Resort Ushers in Esteemed Culinary Talents

DANA POINT  (March 20, 2024) – Waldorf Astoria Monarch Beach is thrilled to announce the appointment of two distinguished culinary talents to its esteemed leadership team, Chef Gordon Maybury and Chef Peter Lai. Maybury has been named Resort Executive Chef, overseeing the culinary experiences across the entire resort while Lai assumes the role of Executive Chef of Bourbon Steak Orange County – Michael Mina’s nod to the American steakhouse. This announcement follows the upcoming retirement of esteemed Executive Chef, Jean-Pierre Dubray, who played a pivotal role in selecting these culinary leaders to carry on his legacy of culinary excellence at Waldorf Astoria Monarch Beach.

As Resort Executive Chef, Gordon Maybury will orchestrate the culinary vision and operations of the property, ensuring a harmonious blend of creativity, quality and efficiency. Responsible for overseeing seven dining destinations and a robust banquet and catering operation, Chef Maybury will foster a culture of excellence and continual innovation in the pursuit of culinary distinction.

Originally from Dublin, Ireland, Chef Maybury brings a wealth of experience to the resort, having showcased his culinary prowess at premier destinations, most recently The Seagate Resort & Club. With an impressive track record at hotels including The Arizona Biltmore, A Waldorf Astoria Resort,  Turnberry Resort & Club, Loews Miami Beach Hotel, and Peninsula Hotel in NYC, Chef Mayburry has consistently garnered recognition for his commitment to gastronomic excellence.

As Executive Chef of Bourbon Steak Orange County, Chef Lai is entrusted with upholding Michael Mina’s culinary vision and commitment to excellence. Spending much of his adolescence at his family’s own restaurant, Chef Lai went on to serve as Executive Chef of notable Orange County restaurants including Water Grill, The Blind Rabbit and Oak Grill. Chef Lai graduated Summa Cum Laude from Texas Culinary Academy and his career  journey is defined by an unwavering dedication to drive innovation and develop other culinary leaders. By celebrating inventive flavor combinations that showcase high-quality ingredients, Chef Peter Lai will contribute to the continued success of Bourbon Steak.
