These appointments reflect The Knickerbocker’s commitment to delivering exceptional guest experience through excellence in refined culinary programming, strategic marketing and sales positioning, and a respected company culture.

Adam Raskin, Executive Chef

Adam Raskin assumed the role of Executive Chef with a successful track record in both fine-dining and busy upscale lifestyle properties. As the former Opening Culinary Director and Executive Chef at Great Jones Distilling Co. in New York City, he was responsible for designing the kitchen and bar, curating activations and creating seasonal tasting menus.

A graduate of The Culinary Institute of America, Raskin has consistently demonstrated his ability to lead and inspire culinary teams, create innovative menus, and maintain the highest standards of quality and service. His proficiency in handling multiple F&B outlets makes his appointment an ideal fit for Charlie Palmer at The Knick, St. Cloud Rooftop, Jake’s coffee shop, and The Knickerbocker’s meeting and event space.

Mauricio Aceves, Director of Sales and Marketing

With a distinguished 30-year career in strategic international marketing and business development, Aceves brings a wealth of knowledge and expertise to the Director of Sales and Marketing role. Prior to joining The Knickerbocker, Aceves served as the Vice President of Business Development at Posadas Group, where he oversaw strategic international commercial communication and marketing implementation for luxury and upscale curated brands within the company’s portfolio.

Aceves’ extensive experience includes positions as Director of Sales & Marketing at Grand Fiesta Americana Coral Beach in Cancun, Mexico, and the Regional Director of Sales & Marketing at Meliá Hotels International in Mexico and the Caribbean. Aceves previously held management positions at various properties under Preferred Hotels & Resorts, Leading Hotels of the World, and the Virtuoso network.

Christine Apergis, Director of Human Resources

With over 25 years of experience in Human Resources, Christine Apergis joins The Knickerbocker from Public Health Solutions, a non-profit healthcare organization where she served as the Interim Chief Human Resources Officer. Prior to that, she held the position of Corporate HR Director at Amsterdam Hospitality, overseeing 10 hotels and a real estate division. She has also worked with Pestana Hotel Group as their Regional HR Director, managing properties in NYC and Miami.

Apergis’ notable achievements include being part of the pre-opening team for Pestana Hotel Group’s 100th hotel in New York and serving as the EVP of Human Resources at Furnished Quarters, a corporate housing and extended stay apartments company. She holds a bachelor’s degree in human resource management from Baruch College in New York and is an active member of the Society for Human Resource Management (SHRM).
