Dallas, TX – September 28, 2021 – The Adolphus announces Michael Bridges as General Manager and Chef Jin Lee as Executive Chef of culinary operations for the hotel. Both relocating from the Los Angeles area to join the iconic Dallas hotel, the duo brings a refreshed energy and expertise to the historic Dallas hotel.

 

Michael Bridges’ experience blends iconic lifestyle hotel openings with refined Ritz-Carlton training. Most recently, Bridges served as Area Managing Director of SIXTY Hotels overseeing full operation with detailed execution and oversight of the Executive Team for the SIXTY Beverly Hills location, representing 118 rooms. During this time, he oversaw the renovation of the pool, rooftop bar, guestrooms and public spaces acting as the liaison between the interior designer, project manager, and ownership.

Prior to his time at SIXTY Hotels, Bridges worked at renowned hotels in both Los Angeles and New York City including, Viceroy Santa Monica (Santa Monica, CA); Fairmont Miramar Hotel & Bungalows (TK); Viceroy New York (New York, NY); Mondrian Soho, Morgans Hotel Group (New York, NY); Smyth Tribeca + Gild Hall, Thompson Hotels (New York, NY); The Ritz-Carlton, Dallas (Dallas, TX); and The Ritz-Carlton Battery Park (New York, NY).

In his role as General Manager of The Adolphus Bridges will manage day to day operations in the historic property, act as a liaison between the hotel and the Dallas community, and strategize on the next evolution and vision for this icon with the team at the Makeready home office.

 

Meanwhile, Chef Lee will oversee the entire restaurant and bar program including in-room dining, and its restaurant concepts City Hall Bistro, The French Room, and Otto’s Coffee and Fine Foods.

Chef Lee brings over 15 years of experience to his role at The Adolphus, most recently serving as the Banquet & Catering Chef at the highly sought-after Terranea Resort in Palos Verdes, CA. In this role, Chef Lee was responsible for overseeing daily operations for catering and banquets as well as designing seasonal menus based on sustainable ingredients, in season produce and local products.

With an extensive background in the hospitality industry, Chef Lee has also spent time in the kitchens of some of the most acclaimed hotels and resorts including, MGM Grand (Las Vegas, NV); Aria Resort City Center (Las Vegas, NV); Wynn Resort (Las Vegas, NV); and Mandalay Bay Resort (Las Vegas, NV).
