SANTA FE, NM, January 14, 2015 – – Officials with La Posada de Santa Fe, a Luxury Collection Resort & Spa, announced that Albert Bilotti, a well-known Albuquerque-based chef who previously led the kitchens at Hotel Andaluz and Tanoan Country Club, will guide the resort’s food and beverage operations as executive chef and director of food and beverage.

The announcement comes as the hotel prepares to reimagine its signature restaurant, Fuego.

“Albert is an entrepreneurial restaurateur at heart, but he understands the resort environment very well,” said Paul Poer, general manager. “That combination of no-limits creativity and well-honed business acumen will help guide us as we re-brand an award-winning restaurant and seek to meet the diverse needs of the luxury hotel guest.”

Prior to joining La Posada de Santa Fe, Bilotti was a restaurant consultant with United Hospitality and partnered with protégé and fellow New Yorker Joaquin Garofalo on Albuquerque’s popular NY Pizza Dept., and the Back Alley Drafthouse. Earlier in his career, he conceived and launched several restaurants, including Lucia at Hotel Andaluz, Slate Street Café and Wine Loft and McGrath’s at the Hyatt Regency Albuquerque, all of which were awarded four out of five stars by the Albuquerque Journal. Under his guidance at Tanoan Country Club, the club’s restaurants and catering offerings jumped from three to five stars as rated by its members.
