Chef Jérôme Chautard Appointed as Executive Sous Chef for VIE Hotel
Bangkok and its VIE Wine and Grill Restaurant in Thailand

Bangkok - January 2012 - VIE Hotel Bangkok and its award-winning VIE Wine and Grill restaurant is pleased to announce the appointment of Monsieur Le Chef Jérôme Chautard as the hotel’s Executive Sous Chef. Well-known for his Provencal style cooking, a blend of Mediterranean and traditional French cuisines, Chef Jérôme is a welcome addition to the team and the continued success of VIE Hotel Bangkok.
 
Chef Jérôme was born and brought up in Bourg en Bresse, near the city of Lyon, whose residents adhere to the belief in not wasting any part of the ingredients they use in their cooking. It’s a philosophy that he has also remained true to, using only top quality ingredients as well as traditional methods of cooking, so that diners not only experience true French cuisine, but the casualness and warmth of eating at a relative’s house.
 
At the age of 16, Chef Jérôme followed his passion for culinary art, cooking first at a restaurant in his hometown, before moving to St. Tropez on the French Riviera, where he spent 15 years working, learning and acquiring a sound understanding of Mediterranean and traditional French dishes.
 
In his 22 years in the culinary industry, he worked at many famous restaurants in France, before moving to Thailand to head the French restaurant, Aubergine. His expertise in Mediterranean and traditional French cuisine made the restaurant extremely popular in the city. He then moved on to the Conrad Hotel Bangkok as Chef de Cuisine.
 
At VIE Hotel Bangkok, Chef Jerome has already begun working his magic creating some wonderful dishes, light meals, main meals, pastries and desserts. He has also been involved in all the hotel outlets including VIE Wine & Grill, VIE 39, VIE Lounge, Room Service, as well as catering for VIE’s exclusive networking parties.
 
Some of his creations so far are the “Irresistible Gourmet Delights” at VIE Bar that include ‘The Nicoise’ salad; ‘beef carpaccio’ with a crisp rocket salad, parmesan cheese, and sumptuous truffle oil; melt-in-the-mouth ‘roasted baby chicken’ flavoured with five spices and honey gravy; ‘Linguini alla pesto’ – served VIE style with basil leaves, garlic, pine nuts and parmesan cheese sauce; the traditional, yet unique ‘Macaroni gratin’ and much more.
