The Vail Athletic Club Names 
Kevin Nelson Executive Chef
 
VAIL, Colo. - Nov. 12, 1999 - The Vail Athletic Club Hotel and Spa (�VAC�) announced today that its award-winning restaurant, Terra Bistro, has promoted Saute Chef Kevin Nelson to Executive Chef. Terra Bistro was recently listed in Wine Spectator for receiving the prestigious DiRoNA award at the Distinguished Restaurants of North America annual conference, held from Oct. 13 to 17 in New Orleans. In addition, Terra Bistro is described in the 1999 Zagat Rocky Mountain Restaurant guide as �an out-of-the-ordinary experience� with �creative food and great service�.

Only 30, Nelson began his career 17 years ago assisting a chef in Long Island, NY. He will now be serving as executive chef of Terra Bistro, known for its eclectic and innovative spa cuisine. Nelson describes it as a �compilation of many cultures� including Asian, Southwestern, and Mediterranean influences. Nelson has created a menu that is in balance with the spa atmosphere, and incorporates a �seasonal logic.� Nelson also creates wine pairings from Terra
Bistro�s creative wine list based on the body and experience of each wine, instead of the typical color or regionally segmented lists.

His goal is to focus on the effects the food has on the body, mind and spirit. He believes that a meal goes beyond satisfying physical hunger and taste buds. He also likes to surprise diners by seeking out components that make them feel good, whether it is flavor, texture, or the physiological effects of different foods.

Although Terra Bistro is famous for its healthy cuisine, Nelson�s personal favorite is the Chocolate Molten, which is a mini cake that is cooked slightly underdone, so that the warm chocolate �oozes out� when it is eaten.

Several celebrities who frequent Terra Bistro have retreated to the kitchen in order to meet and compliment Kevin on his creations.
