WASHINGTON, D.C. (March 13, 2019) – Omni Shoreham Hotel is thrilled to announce the appointment of Eric Cousin to the position of executive chef. A dynamic hospitality veteran with years of experience and a proven track record of professional success in providing superior culinary service, chef Cousin will oversee the hotel’s banquet and restaurant kitchens, which execute hundreds of events each year.

Executive chef Eric Cousin was born into the restaurant life. As a boy in France he worked in his family restaurant, learning the joys and challenges of the business. His great grandmother was a Flemish chef from Belgium who established Les Buffet de la Gare, an upscale brasserie in a train station in the north of France.

Cousin has prepared meals at some of the most distinguished places in the world. His extensive resume includes serving as executive chef at The Plaza Hotel, The Essex House/St. Regis Club Hotel in New York, The Beau Rivage Casino & Resort in Mississippi, Beaux Rivage Casino, Beaches Resort in Turks & Caicos Island and Qatar Foundation in Doha.

“My outlook, although rooted in the classic French style, is very international given my background and experience,” said Cousin. “Food today is all about being healthy and local whenever possible. As a chef, the most important thing to me is helping people maintain a balanced healthy diet while enjoying a fantastic meal.”

Cousin studied at the École Hôtelière de Montpellier in France. Cousin also holds a degree in hotel and restaurant management that he earned in the United States.
