CLEVELAND, OH (February 11, 2019) – Former Cleveland Airport Marriott/AMP 150 Executive Chef Joseph Dubbs will join the downtown Marriott Cleveland Downtown at Key Tower’s team, leading all the hotel’s culinary efforts.

Dubbs, a Cleveland native, first began his culinary career working at local bars and taverns, before landing his first chef gig at Tremont’s Southside restaurant, where he worked while attending classes at Cleveland State University. Not long after graduating CSU, Dubbs decided to pursue cooking full time and headed to Denver where he was accepted to the College of Culinary Arts at Johnson and Wales University.

His hard work at Johnson and Wales earned him acceptance into their competitive program that partners with top restaurants, offering the opportunity to learn and work alongside world-class chefs. Dubbs spent 6 months at the prestigious French Laundry in Napa Valley, California, alongside award-winning chef and owner Thomas Keller.

“Working at the French Laundry is really where my inspiration and passion for cooking really grew. I began to look and appreciate food in a completely different way. I understood how to truly appreciate food, and the precise levels of perfection that go into providing an extraordinary dining experience.”

After Chef Dubbs completed his degree at Johnson and Wales, he returned home to Cleveland, where he spent years leading the culinary and operational efforts at Westlake’s Ironwood Café restaurant before landing at the Cleveland Airport Marriott as Executive chef to in-house restaurant AMP150. His time spent with the Marriott is where he really began to refine his cooking style, which he describes as well-rounded, approachable, with a provision of perfection, personal flare and excitement.

Chef is excited to join the Marriott team at their downtown Key Tower location, which he acknowledges will be both challenging and rewarding.
