BARBADOS (October 5, 2022) — Elegant Hotels, part of the All-Inclusive by Marriott Bonvoy portfolio, is delighted to announce the appointment of Carlos Sebastiani as Multi-Property Executive Chef & Beverage across its seven resorts in Barbados.

Carlos will lead the food and beverage program across the Elegant Hotels portfolio, which includes Positano, a beachfront Italian restaurant and popular mainstay of the island’s dining scene, and Tapestry at Treasure Beach, an on-site restaurant highlighting innovative menus and signature culinary experiences. The portfolio also features the Rum Vault at Colony Club, the island’s first-of-its-kind rum vault, and Shiso at Waves Hotel & Spa, a unique Asian-fusion culinary concept, among many others.

Previously Executive Chef and Food & Beverage Director at JW Marriott Hotel Santo Domingo, Dominican Republic, Carlos brings a wealth of knowledge and experience – as well as a Peruvian flair – to his new role. With over 20 years of F&B experience and a strong background in developing culinary concepts, Carlos honed his skills at several world-class international hotels and cruise lines, including Solace Hotel, Santiago, Chile; the Courtyard Santiago Las Condes; and Delfin Amazon Cruises, a Relais & Chateaux, Peru.

Born in Chiclayo, a city on the northern coast of Peru, Carlos focused on his culinary studies in Lima before entering a professional kitchen for the first time at age fifteen. Inspired by nature and its elements, such as simple stones, wood, and leaves, Carlos searches for the best balance between the natural ecosystem, high-quality produce, and local essence, ensuring that organic waste is limited. Carlos is passionate about designing original menus and has been recognized for creating dramatic dishes that offer a visual and flavorful impact.

Carlos will support the conversion of the seven properties, which are set to undergo a robust renovation in 2023. The culinary scene at Elegant Hotels will be enhanced to provide concepts that retain the high standards and impeccable service that distinguish Marriott food and beverage outlets, with a touch of Bajan flair and international trends to satisfy the most discerning tastes.
