GRAND RAPIDS, MI – January 28, 2015 – The Amway Grand Plaza has appointed Jeffrey Barnum to executive chef of the hotel’s popular dining experience, Ruth’s Chris Steak House. In his new role, Barnum will continue the New Orleans-inspired menu of appetizers, the finest U.S.D.A. Prime steaks, fresh seafood and classic desserts, all complemented by an award-winning wine list. Later this year, he plans to create a series of multi-course wine dinners.

Barnum’s professional career includes experiences at many of Michigan’s notable restaurants. Following two successful years as sous chef at Ruth’s Chris and a position on the culinary team at Cygnus 27, Barnum’s commitment to excellence made him the top candidate for the role. Prior to joining AHC + Hospitality, Barnum served as general manager and chef of over a dozen Michigan eateries, including The Gilmore Collection, a combination of over 20 catering and restaurant brands in Grand Rapids.

“My passion for food is always about pleasing the guest, whether it’s at home or at a restaurant,” says Barnum. “I try to create a quality experience with attention to detail, creativity and fine ingredients.”

The steak house cuisine includes sizzling prime beef, selected from the top 2% in the country. Each steak is broiled at 1,800-degrees and partnered with specialty entrees including stuffed chicken, fresh lobster and a variety of shrimp selections alongside hand-cut fries and flavorful vegetable side dishes. For dessert, indulge in bread pudding with whiskey sauce or chocolate cake.

Originating in New Orleans in 1965, Ruth’s Chris has become a highly sought-after international steakhouse. The Grand Rapids location seats 200 within the bar, open dining room, three private rooms and the Captain’s Table, an intimate group space within the dining room.
