Nick Fielding Appointed as Corporate Director of Restaurants
for Noble House Hotels & Resorts

SEATTLE, Wash. - January 4, 2013 – Noble House Hotels & Resorts, Ltd., proudly announces the appointment of Nick Fielding to corporate director of restaurants. The new role carries responsibilities ranging from constant restaurant concept rejuvenation and providing guidance to each restaurant to meet fiscal responsibilities, to development of employee training standards and execution of consistent, accurate marketplace branding.

“We welcome Nick back to the Noble House family and are excited to add his food and beverage expertise to our executive team,” says Thomas Haas, vice president of food and beverage. “His experience in the hospitality industry, along with attention to detail and incomparable dedication to great guest service will continue be an asset to the brand moving forward.”

Fielding joins Noble House Hotels & Resorts most recently from Wilshire Restaurant in Santa Monica, Ca. where he acted as general manager. There he was responsible for managing a staff of 85 and directing the operational strategy of the restaurant from 2008-2012, with a keen focus on driving profitability and reducing expenditures. Prior to that, he served as food and beverage director at Noble House managed Little Palm Island Resort & Spa in Little Torch Key, developing an extensive wine education program for the “No. 2 hotel dining room in the United States” as voted by Conde Nast Traveler. Fielding is a certified sommelier from the Court of Master Sommeliers.

After a two-year stint as assistant general manager at Wolfgang Puck’s flagship Spago, Beverly Hills, where Fielding managed daily service and front-of-house operations, he returned to Miami to manage Table 8, South Beach at The Regent Hotel. There Fielding advised pre-construction planning of the restaurant and hotel, and directed every aspect of opening the food and beverage operation – from training and purchasing, to banquet/room service and outlet operation.

From 1997-2003, Fielding launched his career at Turnberry Isle Resort & Club, a Rafael Hotel, in Aventura, Fla. He worked as a management trainee, restaurant manager and banquet manager before ultimately becoming the director of restaurants in 2000. He received a B.S. in Hotel and Restaurant Management from the University of Middlesex in London.
