November 2011 - Trisara, Phuket announces the
appointment of Antoine Melon as Resort Manager. Antoine is a graduate
of École hôtelière de Lausanne, with a Diploma for
Higher Studies in Hotel & Restaurant Management. He embarked on his
distinguished career in the hospitality industry with Meridien Balmoral
Hotel in Scotland. From there he moved to Conran Restaurants Limited in
London, where he excelled as Operations Manager in several of the
Group’s restaurants.
From London, Antoine moved to Spain to operate Café Oliver, his
own successful restaurant group with four award-winning restaurants in
Madrid. In 2008 Antoine accepted the position of Food & Beverage
Director at legendary Hong Kong hotel The Mandarin Oriental, where his
success included obtaining Michelin star recognition for two of the
hotel’s dining establishments.
From there Antoine accepted the new challenges of Resort Management,
with a move to Six Senses Laamu, Maldives as Resident Manager for the
opening of the third Six Senses resort in the Maldives.
A native French speaker, Antoine also speaks fluent English, Italian
and Spanish and is passionate about employee training and development.
His belief in nurturing staff relationships encourages the best in his
staff, particularly focusing on the development of food and beverage
concepts and the delivery of luxury experiences.
