is pleased to announce the appointment of Eric Baldridge as Executive Chef
of the Bretton Arms Dining Room. A California native and veteran
of Operation Desert Storm, Chef Baldridge is making a return appearance
to the kitchens of the all-season resort in Bretton Woods, New Hampshire.
He will oversee menu creation and culinary operations at the acclaimed
dining room of the Omni Bretton Arms Inn, a restored inn dating from 1896
that is now part of the Omni Mount Washington Resort.

Baldridge has been professionally honing his culinary chops since age
15 and takes ultimate pride in recreating traditional favorites in his
own contemporary style. His focus is on ingredients that are not only fresh
but also reflective of the region around him. Menu items at the Bretton
Arms Dining Room run the gamut from Grilled Foie Gras and Beef Tenderloin
Au Poive to Seared Monk Fish and Maine Lobster. Breakfast is also served
at the Dining Room, serving up inventive fare like Hawaiian French Toast
with Pineapple Brioche and Banana Compote.

Chef Baldridge�s commitment to the environment fits in seamlessly with
the culture at the Omni Mount Washington Resort. In fact, Baldridge recycles
used cooking oil into �biodiesel� to power his car and heat his home. �Being
green does not mean giving up the things you do, just the way you do them,�
he says.
Baldridge joins the Omni Mount Washington Resort from his position
as Corporate Regional Chef at Centerplate, the Stamford, Connecticut-based
premier food and beverage provider to the sports and entertainment industry.
Previously, he served as Executive Chef at Michael Jordan�s Steakhouse
and Michael Jordan�s 23.sportcafe at Mohegan Sun Casino in Uncasville,
Connecticut. He also held positions in superb kitchens on each coast,
including the Lafayette Park Hotel in San Francisco, The Williamsburg Inn
at Colonial Williamsburg, Virginia, as well as at The Mount Washington
Hotel & Resort before it came under the Omni umbrella.
A dedicated culinary professional, Baldridge is also an active member
of the American Culinary Federation and has served as Vice President of
the New Hampshire chapter.

1902, and the Omni Bretton Arms Inn, a restored inn built in 1896. Renowned
