CLEARWATER, Fla. (Oct. 19, 2009) – Hyatt Regency Clearwater Beach Resort and Spa is proud to announce that a seasoned food and beverage team has been appointed to spearhead the launch of the resort’s restaurants along with catering, weddings and special events. The resort is set to open in December 2009 as Clearwater Beach’s premier luxury vacation destination.
“We’re proud to have recruited an elite team of Hyatt veterans to join us here in Clearwater Beach,” said General Manager Brian Kramer. “The members of this talented group have launched restaurants in some of our largest markets and have designed events and weddings for our most discriminating clientele, and I am excited for them to bring their creative vision to this magnificent resort.”
As executive chef, Brad Gillespie will be responsible for developing and executing the resort’s overall culinary concept. He will oversee all dining outlets including SHOR, an American seafood grill featuring a dramatic show kitchen; swim, offering Pan-Latin fusion dishes poolside; Skimmers, a Seattle’s Best coffee bar and grab-and-go station by day and lively lobby bar by night; and in-room dining.
A native of Canada, Chef Gillespie has worked in the restaurant industry since the age of 14, honing his craft at the South Alberta Institute of Technology. Approaching his 10th year with Hyatt, Gillespie has held positions at high-profile properties including Hyatt Regency O’Hare in Chicago and Hyatt Regency Greenwich in Connecticut. In Clearwater, Chef Gillespie plans to implement an extensive farm-to-table program with a majority of the ingredients being seasonally sourced from within a 100-mile radius.
Director of Catering Andrea Honan will lead the resort’s catering and events department. With Hyatt Regency Clearwater Beach positioned to be the premier venue for events on Florida’s Gulf Coast, Honan’s experience in Chicago at the 206-room Hyatt Rosemont and the 1,096-room Hyatt Regency O’Hare has equipped her with the resources to cater to smaller, more intimate functions and also to concept major large-scale events.
Honan plans on utilizing the resort’s unique function space and impressive vistas, like that available on the 16th level Sky Terrace with views of both the Gulf of Mexico and Intracoastal Waterway, to create breathtaking events. She will also develop and integrate innovative concepts like á la minute service to ensure that guests have a top-of-the-line culinary experience while at the resort.
Rounding out the team is Hyatt veteran David Powell who will serve as the resort’s food and beverage director, responsible for all F&B promotions and events, setting service standards and overseeing the day-to-day F&B operations. During his 11-year career with Hyatt, Powell has served in various positions in properties across the U.S. including Hyatt Regency Grand Cypress, Hyatt Regency O’Hare, Hyatt Rosemont, Hyatt Regency Dallas and Hyatt Regency Newport Beach.
