 Agenda Set for the Pennsylvania Tourism & Lodging Association
Annual Food & Beverage Conference, February 15-17, 2009

December 19, 2008 - The PA Tourism & Lodging Association, in partnership with the Pennsylvania Restaurant Association, will host its Third Annual Food & Beverage Conference from Sunday February 15 through Tuesday, February 17, 2009, at The Hershey Lodge, Hershey, Pennsylvania.  

With the theme �Sweet Success in Food & Beverage,� the Conference will provide quality educational sessions and networking opportunities for all levels of culinary and food & beverage professionals. A hospitality suite will welcome all participants and offer an opportunity for attendees to network with other culinary professionals, Food Show exhibitors and Conference speakers.  

Components for the Conference will include:  

General Session presentations will be offered by: 

  • Ted Kleisner, CEO, Hershey Entertainment & Resorts Company, who will speak on leadership skills; 
  • Jeffery Gitomer, BUYGITOMER, will offer a presentation titled �Serving Up a 5-Star Customer Loyalty Banquet;� and 
  • Nationally known sommelier Marnie Old, Old Wines LLC, will provide a wine and beer pairing experience with domestic and imported products.
The U.S. Foodservice Food/Trade Show on Monday, February 16, 2009, from 11:00 am � 3:00 pm, will offer a variety of exhibitors who will showcase products and services for all aspects of the food & beverage industry. Admission is free.
 
The Celebrity Chef�s Reception will offer a delight for anyone�s pallet. A fine selection of wines for tasting will be provided by Southern Wines & Spirits of Pennsylvania and DIAGEO.  The Reception itself will offer a fine selection of hors d�oeuvres prepared by the very capable culinary team of the Hershey Lodge. Watch as four Celebrity Chefs provide the finishing touch and serve you one of their most noted dishes from action stations from which attendees will be served personally. These chefs include: 
  • Chef Walter Scheib, former Executive Chef of the White House (1994-2005) and Culinary Partner with Hershey Entertainment and Resorts; 
  • Chef Barry Crumlich, Executive Chef of the Pennsylvania Governor�s Residence; 
  • Chef Chris O�Brien of the noted Hyeholde Restaurant in Moon Township, PA; and 
  • Chef Jim Coleman, Executive Chef, Normandy Farms and host of the television series, Flavors of America. 
A selection of six informational workshops will be offered: 
  • Slow Foods - C. Curtis Vreeland, Slow Food Harrisburg Chapter
  • Trends in Foodservice Equipment and Design � Fred Singer, President, Singer Equipment Company
  • The Art & Science of Menu Layout - Chef Malcolm Halliday, CEC, Sysco Central Pennsylvania, LLC
  • Lowering your cost by 5% in 10 days - Sandy Whitman and Joe Becker, U.S. Foodservice
  • PA Producers - Local & Fresh - Pat Brubeck, Creekside Farm, LLC; Joanna Gresham, PA Preferred, Pennsylvania Department of Agriculture and Marilyn Anthony, Pennsylvania Association for Sustainable Agriculture
  • Specialty Beverage Events - Karl McCall, The Hershey Lodge  
A ServSafe Class ® Food Safety Certification and Recertification Course will be offered by the Pennsylvania Restaurant Association.  This Certification is required by the State of Pennsylvania for all establishments in the State that provide prepared food to the public. 

The Conference will close on Tuesday, February 17th with the Pennsylvania Iron Chef Competition hosting some of the most famous chefs in Pennsylvania competing.  Four teams of four chefs each will prepare three courses: appetizer, entrée and dessert for a panel of noted judges to sample. The prepared dishes will also be paired with a wine, which is unknown to the competitors until the competition begins.
