Fabrice Guisset Named Executive Chef of Las Ventanas al Paraiso,
A Rosewood Resort in Los Cabos
LOS CABOS, Baja California, Mexico, Jan. 11, 2007 - Las Ventanas al Paraiso, a Rosewood Resort has named one of the most celebrated chefs in Mexico, Fabrice Guisset, the Executive Chef of the internationally heralded Five-Diamond resort in Los Cabos, announced Managing Director Andres Araya.

"Over the nine years he has been cooking in Mexico, Fabrice has forged a reputation as one of the country's most skilled and creative chefs," said Mr. Araya. "He will be introducing to Las Ventanas an extraordinarily sophisticated and delicate cooking technique he has been developing called Cocina del Fuego, or Fire Cuisine. It will ignite the senses of our guests, delighting their palates and bringing smiles to their faces."

Chef Guisset is a master of the little known culinary art of Fire Cuisine, which is an inspired use of wood-burning ovens and custom grills. Its secret to creating deep flavors is the specific types of wood used with different ingredients, how much heat and flame are applied, and the distance between the grill and the food. While seafood may be cooked high above oak coals for a delicate flavor, a rib eye may be scorched over high grapevine flames to achieve the earthy taste of wild game. Chef Guisset is currently overseeing the installation of ovens and grills at Las Ventanas, and will introduce his Cocina del Fuego menu soon.

He comes to Las Ventanas from Paraiso de la Bonita, the Five Diamond resort in Puerto Morelos in Mexico's Yucatan where he enjoyed widespread acclaim for his fusion of culinary styles. Previously, he was executive chef at the La Jolla de Mismaloya Hotel in Puerto Vallarta and the Camino Real Cancun. The native of Avignon, France, has been in Mexico since February 1998.
