Ross Fraser Named Executive Chef at Emerson Resort & Spa
in New York�s Hudson Valley

MT. TREMPER, N.Y., February 8, 2007 � Scottish born and bred, Ross Fraser has once again been named Executive Chef at Emerson Resort & Spa, an oasis of luxury in the heart of New York�s Hudson Valley set to open in March 2007.  He previously served as Executive Chef at the original Emerson Inn from 2002-2004.  Fraser brings more than 20 years of culinary excellence to the property and has planned a menu incorporating modern American cuisine diffused with a hint of Asian fusion at The Phoenix, the property�s new fine dining restaurant, which opens February 14.
            
Fraser began his life with few aspirations of becoming a chef.  �I was training to become a naval officer and after suffering an injury, took a job waiting tables at a nearby restaurant in my hometown of Glasgow.�  On a particularly short-staffed night, Fraser jumped into the kitchen to give the cooks a hand and found he had inherited his mother�s comestible talent � and has not looked back since. 
            
Fraser was trained at the Glasgow College of Food Technology and held senior positions in some of Scotland�s top dining destinations including the five-star Gleneagles Resort & Golf Course and Kinnaird Country House, a Relais & Chateaux property.  Additional stints in the British Isles include serving as Executive Sous Chef to the Duke and Duchess of Roxburgh, and cooking a banquet dinner for the Queen of England.
            
As Fraser�s role with royalty came to a close, American beckoned and he began his debut as Executive Chef at the original Four Diamond Emerson Inn & Spa serving a European-centric menu for American royalty such as Ray Charles (who requested fried chicken and mashed potatoes each night).  In 2004 Fraser was named one of the �International Who�s Who of Chefs� and with his skilled hand tantalizing taste buds, Emerson Inn & Spa was crowned Most Outstanding Inn in North America by Conde Nast Johansens in 2005.  
            
Fraser left Emerson for a two-year position at 59 Lake, a fine dining restaurant and lounge in Rehoboth Beach, Delaware, but made the decision to return to Emerson with the proposition of opening the new restaurant, The Phoenix. 
            
�I look forward to new challenges at The Phoenix and have created a delicately balanced menu combining modern American dishes with Asian fusion and spa cuisine, including something for every palate and price point.�  Signature dishes feature a selection of soups, salads, seafoods and pastas to start including Phoenix crab cake topped with an �Old Bay� soufflé, and the Thai style pork and ginger salad.  Entrees include Phoenix surf-n-turf with black bass and stuffed chicken drummete, the Roasted butternut gnocchi with pineapple ravioli, and the Seared house smoked dry-rubbed Ahi tuna loin.  The sweet finish boasts Warm chocolate and marshmallow molten cake, Thai sticky soya sweets, and a selection of house made ice creams and sorbets.

The Phoenix restaurant�s interior is designed by Anthony DiGuiseppe, who created the overall look for the resort�s new facilities.  Inside the Phoenix, guests will enter a palatial atmosphere filled with jewel-toned colors accenting centuries-old doors and window treatments.  Two separate dining areas will allow for intimate, adults-only dining in one while families with children can enjoy their meals in the other.  Central to the restaurant is a magnificent bar highlighted by an etched glass rendition of a regal-looking Phoenix.  Spring through fall, guests can enjoy the Phoenix�s expansive deck overlooking the Esopus Creek with stunning views of Mount Tremper.
