places its faith in the new aspirations in the Balearic gastronomy Soller, 9th June, 2005. The Gran Hotel Sóller, a five star establishment magnificently situated in the Costa Nord of Majorca, have appointed Sergio Olmedo to occupy the position of Head Chef in their exclusive Restaurant Ca�n Blau. With this appointment the luxury hotel confirms its interest in promoting the young talents of Majorca and their special vision of the gastronomic qualities of the Balearic cuisine. Sergio Olmedo (Majorca, 1978), who graduated as a cookery specialist technician in the School of Hostelry at the Universitat de les Illes Balears (UIB). He began his professional career in 1996 since when he has worked in some of the best restaurants on the island, amongst the most outstanding are Foravila (Hotel Arabella Sheraton 5* and Michelin star); L�Olivar (Hotel Marriott 5*); Sa Tafona (Hotel Son Net, 4* Relais & Châteaux) and at Read�s (Hotel Read�s, 4* Relais & Châteaux); amongst others. Also during these years Olmedo has assisted different courses and gastronomic events both within and outside of Spain, having at time participated in culinary competitions such as the V Certamen Nacional de Gastronomía celebrated in 1999 in Villa Adeje (Tenerife), during which, together with Francisco Sánchez de Moral, represented the Balearic Islands finishing within the final six first places. The Restaurant Ca�n Blau : a leader in Balearic cuisine. Decorated within the influence of the purest Majorcan style of architecture, in which the most outstanding is the use of natural stone, giving Ca�n Blau a solidity and strength. Within its walls there are some interesting recesses with a private dining room and a luxury cellar well stocked with a variety of exclusive wines. On the exterior, a natural open area welcomes visitors and rewards them with some impressionable views of the Serra de Tramontana and the magical flow of the waters of the Torrent Gros.
