Boulder, Colo. (Sept. 22, 2017) – The Embassy Suites by Hilton and Hilton Garden Inn – two new hotels opening this Fall in Boulder – are pleased to announce that Luis San Martin is now serving as the Dual Director of Food & Beverage.

With more than 16 years of hospitality industry experience, San Martin most recently served as General Manager of Food & Beverage at The Maven Hotel including Kachina Southwestern Grill & Poka Lola Social Club, Sage Restaurant Group concepts that opened this spring adjacent to the Maven in Denver’s new Dairy Block mixed-use development. He previously was the General Manager of Food & Beverage at The Westin and first Kachina Southwestern Grill in Westminster.

Originally from Ecuador, San Martin moved to the United States in 2001. He started his hospitality career in Chicago serving as restaurant manager at Nacional 27, a Lettuce Entertain You concept. He went on to open two restaurants for Chef Randy Zweiban in Chicago and Phoenix, where he opened as General Manager for restaurants at the Westin Phoenix Downtown and was the opening Assitant General Manager of Food and Beverage the Hotel Palomar, a Kimpton Hotel. Before moving to Denver to work with Sage hospitality San Martin served as the General Manager of Sepia in Chicago, a six-time Michelin Star recipient.

The Hiltons on Canyon (Embassy Suites and Hilton Garden Inn) will feature two five-story towers offering a combined 376 guest rooms, along with 8,435 square feet of meeting and event space, state-of-the-art fitness centers and a shared courtyard and pool.

The Boulder Embassy Suites by Hilton will be home to a Brickstones Kitchen & Bar, which will serve wood fired flatbreads and pour a variety of Colorado microbrews and spirits. The hotel will also serve complimentary cooked-to-order breakfast daily and an Evening Reception with snacks, wine & beer. The Hilton Garden Inn will offer The Garden Grille, which will showcase healthy and nutritious food during the week for dinner and a decadent take on brunch, anchored by a unique take on fried chicken and waffles.

The project is being developed by Denver-based Sage Hospitality, one of the nation’s top hotel investment and management companies, and NAI Shames Makovsky, who has been shaping the metro Denver commercial real estate landscape for over 45 years by offering brokerage, development, property management and lending services.
