Feb. 01–CANTON — Gervasi Vineyard is adding a distillery and luxury boutique hotel to its 55-acre estate.

The construction will begin this spring and the new amenities are expected to open later this year or early next year, Gervasi announced Thursday.

"The addition of a boutique hotel and distillery further exemplifies Gervasi Vineyard as a destination resort," co-owner Ted Swaldo said in a prepared statement. "To grow strategically, our objective is to listen to our guests and align our business accordingly."

Gervasi Village, which opened in 2010 as a winery, now boasts three distinct restaurants — The Bistro, The Crush House Wine Bar & Eatery, and The Piazza — and two large event spaces and lodging facilities.

The hotel and distillery will feature a Tuscan-mission style motif and wrap around a European landscaped courtyard to complement the Italian design of the Tuscan-inspired winery and estate, Gervasi said.

The single-story, 18,000-square-foot hotel will host 24 large individual suites featuring king-sized beds, fireplaces and heated floors.

The hotel has yet to be named.

"Gervasi Vineyard is a leading example of why one should always dream big," city of Canton Planning Director Donn Angus said in a prepared statement. "What the Swaldo family has developed in Canton is nothing short of amazing. With the announcement of the future upscale hotel and distillery, I cannot wait to see the completion of these two spectacular venues and the overall community impact. It will certainly prove to be another premiere asset for our fine city."

Meanwhile, the 10,000-square-foot distillery will feature an extensive line of craft spirits.

"We are proud to be one of the first wineries in Ohio to break into the craft distillery market," co-owner and general manage Scott Swaldo said. "There are very few distilleries in Ohio. This provides a great opportunity to expand the demographic into the millennial market and broaden our appeal to consumers seeking a unique experience."
