With tremendous talent, experience and passion for the culinary arts, Dolbee will bring a new perspective and energy to the resort’s celebrated dining venues.

As Executive Chef, Dolbee will continue to evolve The St. Regis Bal Harbour Resort’s exquisite culinary offerings and in-room dining services while creating exceptional and innovative dishes for both Miami’s residents and travelers alike. The dining venues which Dolbee will oversee are a destination in itself, and include, The St. Regis Bar, which offers a variety of hand-crafted sushi rolls, all of which are customizable and prepared by talented sushi chefs using the best grades of fish and premium ingredients; Fresco, the resort’s celebrated poolside and oceanfront dining venue, inspired by the quintessential flavors of the Amalfi Coast; and Atlántico, a beautiful, sun-filled spot for breakfast which is served daily in the resort’s J&G Grill dining area. Additionally, Dolbee will oversee the resort’s banquet and catering services as well as all weddings held at the resort.

Educated from the principles of Auguste Escoffier School of Culinary Arts, the California native embarked upon his culinary career at the age of 18 at the Ritz Carlton Laguna Niguel. From there, Dolbee traveled throughout the United States and Canada, creating unique gastronomic experiences for guests in establishments such as La Costa Spa & Resort in Carlsbad, California, Manele Bay Hotel on the Island of Lana’I, Hawaii, Wauwinet Inn on Nantucket Island, Sagamore Resort on New York’s Lake George and Chef Joaquim Splcihel’s renowned Pinot Provence in Costa Mesa, California. Prior to his most recent role as the Executive Chef of the Rosewood Crescent in Dallas, Dolbee was the Executive Chef at TheBlvd at the Four Seasons in Beverly Hills and L’Auberge Del Mar’s highly-recognized Kitchen 1540.

With more than 25 years of taste and experience at the table, Dolbee has been awarded numerous prizes and accolades. While serving at the Four Seasons Resort in Whistler, Dolbee helped the hotel earn Canada’s only Five Diamond distinction. Dolbee has also made multiple appearances at the James Beard House in New York, as well as at esteemed culinary events throughout California, including the Chefs of Orange County, Star Chefs and Picnics des Chefs.
