CHICAGO (Feb. 14, 2018) – Carving out a niche sector in the travelsphere, Urban Holiday Management, the pioneers in hyper-local alternative lodging, becomes Bedderman Lodging. The lodging company, dedicated to creating distinctive experiences in travel while establishing community, lends an array of properties with varying room types designed to accommodate every type of traveler ensuring affordability and approachability in a cultural and creative setting. With that, the team is thrilled to announce the hire of acclaimed Chef Sarah Jordan as the hotel brand’s Food & Beverage Director. With current properties including boutique hotel FieldHouse Jones in River North and alternative lodges Urban Holiday Lofts and Holiday Jones – located in Bucktown and Wicker Park respectively – as well as an expansion of the FieldHouse Jones brand in Nashville and the forthcoming luxury boutique hotel The Wheelhouse Hotel in Wrigley, Bedderman Lodging looks forward to its expansion and serving its guests and local community.

As Food & Beverage Director, Jordan has a hand in curating and developing unique concepts within the forthcoming properties as well as F&B related in-room amenities and hotel programming. “With this new role, I am looking forward to creating a distinct food & beverage experience that represents our brand,” says Sarah, “And I am excited to utilize my hospitality experience on a new scale.”

To start, Jordan is adding her own flare the brand’s proprietary F&B outlet DropShot Coffee & Snack Bar located within FieldHouse Jones (312 W. Chestnut St.). Committed to offering the finest coffees without the pretense, DropShot Coffee & Snack Bar provides an all day cafe and coffee shop for both Chicago locals and visiting travelers. With plans to put her own personal touches on the entire menu, for starters Sarah launched the Avocado Toast with chunked avocado tossed in a chimichurri sauce, pickled red pearl onions, radishes, poached egg, and cilantro on toasted sourdough, The Bancroft, a breakfast sandwich on toasted croissant with scrambled eggs, Cheddar cheese, bacon, avocado and pickled fresno peppers, and the DropShot Burger of two all-beef patties with American cheese, housemade bread and butter pickles, and FieldHouse sauce on a toasted bun.

Up next, Sarah is working closely with the Bedderman Lodging team to develop FieldHouse Jones’ downstairs speakeasy lounge, Janitor’s Closet.
