Chef Lecturer Jacques Laurent is a great believer in the principle that
the ideal place to learn about preparing Asian cuisine is in Asia, so he
took a group of student chefs from the class of 2000 to Thailand to extend
their culinary horizons.
�We attended Thai cooking classes at the Royal Cliff Hotel in Pattaya,� said Laurent �where the students were taught all aspects of Thai cooking by Executive Sous Chef Wuthicha Kuilong, right from visiting the local produce markets in the early mornings, identifying and choosing ingredients - a fascinating experience, with overflowing baskets of spices, herbs, chillies, tropical fruits and vegetables providing a wonderful display of colours and textures�. �We then spent the day preparing, cooking and presenting a wide variety of Thai dishes from various regions in Thailand, under the tutelage of master chefs. We were even taught elaborate fruit and vegetable carving techniques�. At the end of the course, each student was presented with a Certificate
of Accomplishment and returned to Australia inspired with innovative ideas
for blending Asian ingredients with local Australian produce and eager
to put their newly learned traditional and contemporary Thai cooking techniques
into practise in their Aussie kitchens.
