 Chef Robbin Haas Developing  Restaurant - Baleen - 
at Noble House Hotels San Diego Paradise Point Resort
San Diego, CA - May 4, 2000 - An exciting new high-end restaurant, Baleen, is currently under development, by world-renowned chef and restaurateur, Robbin Haas, who will create a stylish and innovative seafood restaurant for all of San Diego to experience. The development and construction of Baleen is expected to take three to four months, with a grand debut currently scheduled for late summer 2000.

This unique 150 plus seat restaurant will feature stone floors, an open kitchen, weathered woods and the warmth of a glowing fire, as well as classic, stylish, rich interiors with a Bohemian touch of whimsy, chandeliers of hanging monkeys, and alfresco dining looking across the waters of scenic Mission Bay. All this, coupled with new world music, an eclectic mix of well-trained employees and sophisticated yet subtle service will create an electricity in the restaurant that is only complimented by the food.

Diners will soon be able to experience tantalizing entrees such as chilled lobster in a martini glass, a warm salad of roasted mushrooms and asparagus, or fresh oysters delivered on a small cart, shucked tableside, to start. Then savor a wonderful selection of local seafood prepared simply grilled, wood-roasted, sautéed or with a hummus crust, honey-wasabi glaze or ginger barbecue sauce. Succulent, wood-roasted meats include Roquefort-crusted filet mignon and a veal t-bone marinated in olive oil, rosemary and roasted garlic. Delectable desserts will range from a collection of four fruit-infused egg custards to warm chocolate fondue, or a selection of freshly churned ice creams.
 

This will be the second Baleen to open at a Noble House Hotel. Baleen Grove Isle in Miami has received an "Exceptional" rating from The Miami Herald and "Hot New Restaurant in Miami," by Bon Appetit. David Rosengarten, in Gourmet magazine, describes Baleen as "one of the best restaurants in Miami".

Baleen will be located on the tropical grounds of the newly revitalized Paradise Point Resort in San Diego. The venue for Baleen is the resort's former 4,200 square foot Presidential Suite, which will be exquisitely transformed to accommodate the exciting new addition of this spectacular new dining experience for Southern California.
