LAS VEGAS - June 28, 1999--Il Fornaio (America) Corp. (Nasdaq:ILFO)
announced the opening today of Canaletto Ristorante Veneto, located at
the intersection of the Grand Canal and Piazza San Marco in The Venetian
Resort Hotel and Casino in Las Vegas. Canaletto brings the food and wine
of Italy�s fabled Tre Venezie area to a setting that recreates the splendor
of Venice. A seamless marriage of food, service and ambiance, Canaletto
transports its guests to another time and place.
Executive Chef Maurizio Mazzon (a native of Venice) and Chef/Partner
Luigi Bomparola have crafted an unusual menu with Venetian specialties
including whole fish baked under a salt crust, Bigoli Sull� Anara (handmade
spaghetti with porcini and duck ragu), Boccon Del Prete (spinach and ricotta
dumplings with gorgonzola cream sauce and toasted walnuts), and five different
risotto preparations each day.
A silver tray bearing traditional Venetian breads begins each meal and
desserts created on the premises complete the ideal Venetian culinary experience.
The carefully selected wine list featuring little-known wines of Italy�s
northeast includes a special section devoted to Prosecco, the Italian grape
cultivated throughout the Veneto.
Canaletto�s exquisite architecture offers guests a range of seating
options, from �outside� dining on St. Mark�s Square, to an intimate formal
dining room or one of four private rooms upstairs that can accommodate
groups as small as six or as large as sixty. Each private dining room has
unparalleled views of the piazza and gondolas plying the Grand Canal.
