Canaletto Ristorante Veneto, Created by Larry Mindel, Opens at The Venetian Resort Hotel

LAS VEGAS - June 28, 1999--Il Fornaio (America) Corp. (Nasdaq:ILFO) announced the opening today of Canaletto Ristorante Veneto, located at the intersection of the Grand Canal and Piazza San Marco in The Venetian Resort Hotel and Casino in Las Vegas. Canaletto brings the food and wine of Italys fabled Tre Venezie area to a setting that recreates the splendor of Venice. A seamless marriage of food, service and ambiance, Canaletto transports its guests to another time and place.

Executive Chef Maurizio Mazzon (a native of Venice) and Chef/Partner Luigi Bomparola have crafted an unusual menu with Venetian specialties including whole fish baked under a salt crust, Bigoli Sull Anara (handmade spaghetti with porcini and duck ragu), Boccon Del Prete (spinach and ricotta dumplings with gorgonzola cream sauce and toasted walnuts), and five different risotto preparations each day.

A silver tray bearing traditional Venetian breads begins each meal and desserts created on the premises complete the ideal Venetian culinary experience. The carefully selected wine list featuring little-known wines of Italys northeast includes a special section devoted to Prosecco, the Italian grape cultivated throughout the Veneto.

Canalettos exquisite architecture offers guests a range of seating options, from outside dining on St. Marks Square, to an intimate formal dining room or one of four private rooms upstairs that can accommodate groups as small as six or as large as sixty. Each private dining room has unparalleled views of the piazza and gondolas plying the Grand Canal.

Canaletto Ristorante Veneto was created by Larry Mindel, chairman and founder of Il Fornaio (America) Corporation. Il Fornaio also owns and operates 17 full-service Italian restaurants that serve creatively prepared, premium-quality Italian cuisine based on authentic regional Italian recipes. Each restaurant houses a retail market offering Il Fornaios unique baked goods, prepared foods and a variety of Il Fornaio-brand products. The Company also operates five wholesale bakeries that produce fresh, hand-made breads, pastries and other baked goods for sale in its own locations and to high-quality grocery stores, coffee retailers, hotels and other fine restaurants.

The Canaletto Story

Amidst Las Vegas' growing collection of simulated cities, cultures and
landmarks, The Venetian has taken careful measure to reproduce more than just structure in fact, recreating the elegance and passion of old Italy. Of course, how better to capture the heart and soul of a culture than through its art and its food? Thus, Canaletto Ristorante Veneto was born. As the crown jewel of the most romantic and elegant cultural preserve to rise up in recent years, Canaletto brings the finishing touches to The Venetian.

The founders of Il Fornaio designed Canaletto to stand as the quintessential Venetian ristorante. Il Fornaio Chairman Larry Mindel and Executive Chef Maurizio Mazzon - a native of Venice have blended their expertise to unleash a gourmet fantasy at the intersection of The Venetians Grand Canal and Piazza San Marco.

Canalettos architecture gracefully complements its spectacular location. Guests are transported to old Venice as they sit at tables under a 100-foot ceiling painted with sky and clouds, giving the area an al fresco trattoria feel. The restaurants unique two-story space pays homage to Giovanni Canal's celebrated art with an elegant double-arched bar, jewel-tone accents and polished hardwood floors that blend into terrazzo tile. Exquisite Venetian lights and chandeliers, commissioned by Mindel and crafted by the artisans of Murano, bring the Canaletto experience to life.
