DENVER (FEBRUARY 27, 2013) - Today, Ben Hardaway, Director of Food and Beverage for Hyatt Regency Denver Tech Center, the only Four Diamond hotel in the famed Denver Tech Center, announced that Chef Kimo Akana will serve as Executive Chef of the new Root25 Taphouse & Kitchen. Root25 Taphouse & Kitchen, which opened on Saturday, February 23, is the property’s new signature restaurant. “I’m excited to be part of the team for this new culinary adventure at Hyatt Regency Denver Tech Center,” said Chef Kimo Akana. “As an avid craft brewer myself, I’m passionate about beer and the gastro pub concept. Since Root25 is all about the beer, I’m looking forward to the opportunity to highlight not only Colorado craft beers, but also Colorado artisinal ingredients, on this new menu.” A seasoned and award-winning chef, Akana began his career with Hyatt Hotels in 1997. During his almost 16 years with Hyatt, Akana has held numerous culinary positions including Chef de Cuisine at Grand Hyatt Kauai Resort; Executive Sous Chef at Hyatt Regency Tamaya Resort; Executive Sous Chef at Grand Hyatt San Antonio and most recently, Executive Chef at Hyatt Regency Tampa. A native of the Hawaiian Island of Kauai, Akana is a spirited leader and an accomplished chef who will bring his talents for food thoughtfully sourced and carefully served to the Hyatt Regency Denver Tech Center. Recently opened at Hyatt Regency Denver Tech Center, Root25 Taphouse & Kitchen is a gastro pub venue whose menu reflects historic recipes from Colorado pubs, bistros and watering holes. Featuring Colorado craft beer such as Avery and O’Dell’s, as well as craft spirits from the region, Root25 Taphouse & Kitchen will also work with some of Colorado’s best-known local purveyors, including Lombardi Brothers, Haystack Mountain Goat Dairy and Udi’s Artisan Bread through seasonal menus and ingredients. Root25 Taphouse & Kitchen will offer several private dining spaces, accommodating groups of 10 – 30 people. The creation of Root25 Taphouse & Kitchen is part of a $5 million renovation that is underway at Hyatt Regency Denver Tech Center. The hotel’s pre-function and public spaces, known locally for hosting weddings, social galas and corporate meetings and events, can accommodate up to 800 guests and will debut at the end of February. Updates to the lobby, including new technology to expedite the check-in process, have already been completed.
