Paul McCabe Appointed as Executive Chef for the 112-key
La Valencia Hotel in La Jolla, California

- Chef McCabe brings extensive background experience to La V in both hotel and standalone restaurant venues including the Enchantment Resort in Sedona Arizona, L’Ermitage Hotel in Beverly Hills and L’Auberge del Mar in Del Mar California. His San Diego restaurant tenure includes Top of the Cove, Star of the Sea Room, Kitchen 1540 and most recently Delicias. “These institutions represent an exceptional pedigree of excellence in cuisine and service and the success record of each venue stands alone” quotes Mark Dibella, Managing Director of La Valencia.

With his leadership experience Paul brings to the La V family extremely well honed culinary training in Classical French, Mediterranean, Southwestern, Pacific Rim and Spa cuisine – all ideal compliments to the properties current and future dining concept plans.

Paul has apprenticed with Chef Michel Blanchet of L’Ermitage and was inducted in June 2000 as Chef Rotisseur and Chaine des Rotisseurs. Additional accomplishments include James Beard House 2000, 2001 and 2006, 2008 Best Hotel Chefs and 2002 Rising Star of American Cuisine awards.

La Valencia Hotel or “La V” is comprised of 112 accommodations which include 16 circa 2000 villas along with a unique collection of suites and guestrooms housed in the main 1926/1928 tower building overlooking Ellen Browning Scripps Park and stunning views of the Pacific Ocean. Dining options include the signature Mediterranean room with ocean view terrace adjoining the La Sala Lounge, Café La Rue/Whalers Bar fronting Prospect Street and the intimate 10th floor Sky Room. La V is located in the center of the Village of La Jolla and steps away to premier retail and dining.
