to announce several recent management and supervisory-level
appointments at its
properties worldwide. These include:
Don Fennerty, who takes the helm as general manager, The Fairmont Empress. Fennerty brings a wealth of hospitality experience to this position and most recently was general manager at sister property The Fairmont Hotel Macdonald. Over the last 30 years, Fennerty’s career has seen him take on a number of progressive roles in the areas of food & beverage, operations, human resources, banqueting, front office and rooms. Joseph Kinuthia, who has been named executive chef at Fairmont Mara Safari Club. Having held various culinary roles over the course of his 17-year hospitality career, Kinuthia joins Fairmont from his most recent position as executive chef, Mara Leisure Camp, Kenya. Toronto’s Fairmont Royal York has tapped Tim Morrison as hotel manager. With a career spanning almost two decades, one of Morrison’s more notable posts was managing director/general manager for the Olympic and Paralympic Village for 2010 Winter Olympics in Vancouver and Whistler. Most recently, Morrison was general manger at Pinnacle Hotel at the Pier in North Vancouver. Arriving in London at The Savoy, A Fairmont Hotel is Marie-Laure Akdag who has been named regional director, sales & marketing. Akdag joins the iconic hotel from her most recent position as hotel manager at 45 Park Lane, London. Over the course of her hotel career, Akdag has worked at a number of well-known hotels including the Hotel de Crillon in Paris and the Burj Al Arab in Dubai. Cooking his way to Arizona is David Morris, who has been named executive chef at the AAA Five-Diamond Fairmont Scottsdale Princess. Throughout his career, Morris has flaunted his culinary flair in top US markets including Colorado, Phoenix, and Las Vegas. Before joining Fairmont, Morris was the executive sous chef/assistant executive chef at Aria Resort and Casino. Fairmont Pacific Rim has promoted Rudi Gimmi to the position of hotel manager. Gimmi brings over 18 years experience to this position and most recently was the hotel’s director of operations. Gimmi has travelled the world throughout his career with stops in Germany, France, Mexico, Canada and the United States. Leading the culinary direction at Shanghai’s fabled Fairmont Peace Hotel is j.W. Foster, who has been named the hotel’s executive chef. Moving to The Orient from his most recent posting at The Fairmont San Francisco, where he made headlines for his focus on sustainability and local menu offerings, Foster is a skilled chef with more than 22 years of culinary work under his belt. Jason Dalling, who has been named executive chef at Fairmont Pittsburgh. Dalling brings an impressive resume to this LEED certified hotel having cooked in Fairmont kitchens including The Fairmont Jasper Park Lodge to The Fairmont Washington, D.C. New to Fairmont is Lorraine Sinclair, who takes over culinary duties at The Fairmont Dubai as executive chef. She moves to the Middle East from her most recent position as executive chef, Grand Tarabya Hotel in Istanbul. With close to two decades worth of experience, Sinclair has had a flavorful journey during her career with posts in South Korea, Hong Kong, Bahrain and more. Fairmont St Andrews, Scotland has appointed Alan Matthew as executive chef. Matthew started is hospitality career in 1978 and has honed his talents with some of the finest in the industry including positions with Four Seasons and Mandarin Oriental. He joins Fairmont from his most recent position as executive chef at Marriott Dalmahoy Hotel Golf & Country Club in Edinburgh. Bringing some new flavors to Fairmont Battery Wharf, Boston is Arwi Odense, who moves into the role of executive chef. With credentials from leading groups like the Sommelier Guild and Culinary Institute of America, Odense has honed his craft at several Fairmonts over the years including positions with The Fairmont Chateau Whistler, The Fairmont Copley Plaza, The Fairmont Vancouver Airport and most recently with Fairmont Newport Beach. Helen Van Wengen, who takes over duties as director, sales & marketing, Fairmont Bab Al Bahr. Heading to Abu Dhabi from her most position as general manager – U.K. & Ireland, Mary Kay Inc., Van Wengen has had an extensive career in hospitality since starting as a trainee with Hilton Hotels almost 20 years ago. This included a variety of sales and marketing roles with groups including Marriott, Mövenpick and Wyndham. Amy Kantorczyk has moved from her food & beverage role at The Fairmont Kea Lani to serve as director of operations at The Fairmont Sonoma Mission Inn & Spa. Kantorczyk brings over 14 years of hospitality experience to this position, beginning her career in 1998 at the Omni Shoreham Hotel in Washington, DC.
