Appoints Jose Salvador Campuzano as Executive Chef
for its De Cortez Grill & Restaurant


Los Cabos, Mexico (April 9, 2012)
– The Sheraton Hacienda del Mar Golf & Spa Resort in Los Cabos is pleased to welcome Jose Salvador Campuzano as executive chef of De Cortez Grill & Restaurant, one of the resort’s two Five Star Diamond Award-winning restaurants.  Campuzano returns to his native Mexico from the Sheraton Paris Airport Hotel & Conference Centre, where he served as executive sous chef for two years, with a goal to bring the rich flavors of French and Mediterranean cuisine to the forefront in Los Cabos.

“Chef Campuzano has worked in some of the top kitchens in Paris, so we are looking forward to his adaptation of French techniques to complement and further develop the established menu at De Cortez,” said Manuel De Luca, executive chef of the Sheraton Hacienda del Mar Golf & Spa Resort.  “Cuisine in Los Cabos is truly a global experience, and we are proud that he will provide a new gastronomic experience to our guests.”

Campuzano’s style of creating simple, elegant dishes that respect each ingredient will work in harmony with the existing preparation of guests’ favorites on the De Cortez menu.  He hopes to incorporate his experience with the world’s diversity of spices, flavors and styles of eating into the menu, and continue the restaurant’s dedication to the use of fresh, regional ingredients and seafood.

“Cooking for me is an art, an art of coordinating the five senses to enjoy the style and personality of each unique dish,” said Campuzano.  “De Cortez has such a delectable and artistic menu already, but I will bring my own style to the restaurant.  I aim to honor the established Mediterranean concept of the restaurant, while also creating innovative dishes to advance its gastronomy.”

In addition to his time at the Sheraton Paris, Campuzano served as the chef de cuisine for four years at Alain Passard’s three Michelin starred L’Arpege.  Over the past 14 years, he has also served as the executive chef at Fiesta Americana Puebla Hotel, Cibeles Convention Center in Juarez, Mexican Lebanese Cultural Center in Puebla and Universidad de las Americas in Puebla.

Campuzano holds a bachelor’s degree from the Escuela de Gastronomía Maria Reyna and a diploma from the Puebla campus of Instituto Tecnológico y de Estudios Superiores de Monterrey (ITSEM).
