March 2012 - Peppers Beach Club & Spa has appointed Vanessa Grace to the position of Executive Chef at the luxury Palm Cove resort. Chef Grace is now leading the talented team at the resort's acclaimed Lime & Pepper restaurant on the Williams Esplanade dining strip, bringing with her a superb knowledge of tropical flavours and a love of fresh produce. Prior to Peppers Beach Club & Spa, Chef Grace was Executive Chef at the former Peppers Palm Bay in the Whitsundays and the Great Barrier Reef’s Heron Island Resort. Her extensive career history, which ranges from Lizard Island Resort to the Park Hyatt in Beijing, has provided her insight into the wide-ranging palettes of diners from around the globe. At Lime & Pepper, Chef Grace has introduced a fresh new menu inspired the plentiful Tropical North Queensland region which includes her signature tropical dessert of Mareeba pineapple soda, coconut ice cream, dragonfruit and Malibu jelly.
