JW Marriott Starr Pass Resort, Tucson, Arizona Opens "Competition-Style" Barbeque Restaurant with Executive Chef Chris Brown at the Pit


Tucson, Ariz. (1/12/09) – JW Marriott Starr Pass Resort & Spa’s Catalina Barbeque Co. & Sports Bar is set to debut this January. The menu will feature competition-style barbeque, with specialty sauces and rubs made in-house. Starr Pass’ Executive Chef Chris Brown, an award-winning barbeque pit master, has carefully crafted the menu to include a delicious selection of smoked meats and Southwestern specialties.

Competition-style barbeque is famous in the Midwestern and Southern states, where huge barbeque competitions, or cook-offs, bring out the best chefs across the country. Competitors are judged on a variety of criteria. Having been a contender in such competitions, Executive Chef Chris Brown and Catalina’s five other certified barbeque judges have developed recipes that deliver the best barbeque in Tucson.

The Catalina Barbeque Co. & Sports Bar menu includes a delicious selection of appetizers, soups and salads, barbeque specialties, chef-crafted sandwiches, sides and desserts. The fresh, all natural meats are prepared at least one day ahead by introducing flavors and seasoning into large cuts. After 24 hours has passed, the meats are smoked in-house for 12 hours using a special blend of mesquite, oak and pecan woods. During the smoking process, Catalina’s own whiskey blend is added to ensure the meat is tender, juicy and downright delicious.

Featured menu items include a pulled-pork barbeque tostada, smoked Harris Ranch brisket, smoked sausage, baby back ribs, bourbon-creamed corn, and much more. Patrons have a choice of three sauces to accompany their barbeque items, including sweet, spicy and thin vinegar. The restaurant is open seven days a week from 10 a.m. to 9 p.m.
