OWNERS AND DEVELOPERS: Diaz Rivera Family, Co-developers
In
1975, architect, visionary and family patriarch Manuel Diaz Rivera began
developing 360-acres of land at the tip of the Baja California peninsula,
transforming it into the prestigious neighborhood of Pedregal de Cabo San
Lucas. Weary of Mexico City�s urban sprawl, Don Manuel brought his family
to Cabo in the 1970s, when it was a small, 900-inhabitant fishing village,
in search of a place in which they could work, live and thrive together
while building a dream. He purchased the land that would become Pedregal
in 1974, recognizing the great potential in its glorious views of both
the Sea of Cortez and Pacific Ocean, and sold his first lot in 1978.
Thirty years later, several generations of Diaz Riveras continue to
live at Pedregal, each having chosen a favorite vantage point for his or
her own home. They have developed the gated community with painstaking
care into Cabo�s most exclusive neighborhood. More than 340 homes
have been built along its cobblestone streets, where the charms of old
Mexico blend harmoniously with every modern convenience.
Don Manuel groomed his children to continue his legacy and today, the
Pedregal dream is actively nurtured through son Manuel and daughter Leticia,
all of whom are Executive Board members. In addition, Don Manuel�s
eldest grandson, Juan F. Diaz Rivera, leads the family�s project team developing
the community�s last untouched site � 24-acres of breathtaking cliffside
and beachfront land, with unrivaled views of the Pacific Ocean and Cabo

Bowling oversees all operations of Capella Pedregal, including its full-
and fractionally-owned Residences and Casonas, and the 66-room beachfront
resort and spa which opens July 13, 2009.
Bowling began his career in the hospitality industry in 1986 as general
manager of Chilston Park Country House in Ashford, Kent, England where
he helped transform what was a 12-room Queen Anne mansion into an award
winning, 42-room country house. He soon went on to serve as general
manger of The Inn at Perry Cabin in St. Michaels, Md.
Bowling is no amateur when it comes to managing warm-weather resorts,
as he has held the general manager position at some of the Caribbean�s
finest resorts including The Royal Pavilion in Barbados and the Cotton
House Hotel in Mustique. Bowling also served as managing director
of Villa Nova, Barbados� first boutique style hotel, and at the renowned
Jumby Bay in Antigua, where his expertise helped guide the resort successfully
through an extensive renovation and to gain international accolades.
Bowling is a member of the Capella family, having most recently held the
position of general manager at Capella Castlemartyr in County Cork, Ireland.
Bowling resides in Cabo San Lucas, Mexico, with his wife Kathy.
EXECUTIVE CHEF: Marco Bustamante
Marco Bustamante is the Executive Chef at Capella Pedregal, a new Capella
Hotels and Resorts resort and residential community slated to open July
13, 2009 in Cabo San Lucas, Mexico. Bustamante is responsible for the creation
and execution of all menu concepts for the resort�s three dining establishments.
Bustamante brings his fine dining expertise and experience in five diamond
and Michelin-rated establishments to Capella Pedregal, where he works with
local purveyors to design menus that incorporate the freshest ingredients,
locally grown exclusively for Capella Pedregal. Bustamante�s
menus feature seasonal dishes and old-world techniques to create refined
traditional Mexican dishes which evoke a true Baja feel. Bustamante�s
talents are showcased in the cuisine at Capella Pedregal�s fine dining
room, Don Manuel�s, located in the heart of the resort; El Farallon, a
dramatic alfresco cliffside grill suspended over the ocean serving fresh
seafood, and casual poolside dining at the Beach Club.
Bustamante began his culinary career in 1999 as chef de partie at the
newly re-opened Russian Tea Room in New York where he assisted Chef Frabrice
Canelle in menu development and training of new staff. From 2000-2003,
he served as sous chef at Victor�s, the Ritz Carlton New Orleans� AAA rated
five-star and five-diamond dining establishment. Bustamante then
moved on to spend a year as chef de partie at Thomas Keller�s Per Se in
New York. In 2004, he began his tenure with the West Paces Hotel
Group, parent company of Capella Hotels and Resorts, first as executive
chef at L�Augberge de Sedona in Sedona, AZ, then as executive chef at Hotel
71/Solis Chicago Hotel and Spa in Chicago, IL. In 2007, Bustamante
assisted in the opening of Schloss Velden, a Capella Hotel in Velden, Austria,
the first hotel to debut in the Capella Hotels and Resorts collection.
Bustamante is a graduate of the acclaimed French Culinary Institute
in New York. He resides in Cabo San Lucas with his wife Heather.

Capella Pedregal�s enchanting natural environment inspires the design
and landscape. The site encompasses 24 spectacular mountainside and

The development is reached via the only privately-owned tunnel in Mexico.
