 Jim Chapman Appointed Executive Chef of Food
Operations in Yellowstone National Park

YELLOWSTONE NATIONAL PARK, May  28, 2004 - Xanterra Parks & Resorts, operator of restaurants, lodging and activities in Yellowstone National Park, has appointed Jim Chapman executive chef of its food service operations in the park.

Chapman is responsible for dining rooms, cafeterias, delis and snack shops in nine hotels located throughout the 2.2 million-acre park.

Prior to joining Xanterra, Chapman was executive chef at a casino and resort in Mississippi as well as resorts in South Carolina, Vermont and New Hampshire. Chapman is a graduate of the Culinary Institute of America and is a certified executive chef with the American Culinary Federation (ACF). He is a culinary competitor and has won several medals in ACF competitions.  He has also coordinated apprenticeship programs in conjunction with the ACF.

Xanterra Parks & Resorts, Inc. operates lodges, restaurants and other concessions at national parks and state parks and resorts.
