 Chef Graham �Elliot� Bowles Joins Jackson House
Inn & Restaurant, Woodstock, Vermont

WOODSTOCK, VT -- June 19, 2003 -- Beginning June 25, The Jackson House Inn & Restaurant, a 15-room luxury property and fine dining venue located in Woodstock, Vermont, will feature the epicurean delights of Chef Graham �Elliot� Bowles.

The announcement was made by Carl Delnegro, proprietor of the inn. A rising star in the culinary world, Chef Bowles� career to date has brought him to some of the most notable restaurants in the country, including Charlie Trotter�s, Tru and The Mansion on Turtle Creek.
 

�We are thrilled that Elliot has come to us,� said Delnegro. �His style and innovative culinary talents will bring a cosmopolitan flair to the town of Woodstock and will raise the Jackson House cuisine to another level, which is that of a true dining destination.� 

Chef Bowles received a degree in culinary arts from Johnson & Wales University in 1997 and began his career at The Mansion on Turtle Creek in Dallas. The following year he

received an offer to join world-famous Charlie Trotter�s in Chicago working under the direction of Chef Trotter himself.It was here where Chef Bowles honed his skills by working every station in this five-star kitchen.

His talent and passion for cooking brought him notoriety in the Chicago culinary world, ultimately leading to a position at TRU, one of the city�s finest restaurants and a member of Relais & Gourmand.

While at Tru, he had the opportunity of assisting Chef Rick Tramonto develop his cookbook titled Amuse-Bouche: Little Bites That Delight Before the Meal Begins. In 2001, Chef Trotter invited Chef Bowles back to Charlie Trotter�s to help launch Trotter�s to Go, a fine-dining take-out venue where he remained until joining The Jackson House Inn & Restaurant. 

Chef Bowles has also had the opportunity of cooking alongside some of the world�s most famous chefs, including Alain Ducasse, Daniel Boulud, Ferran Adria of el Bulli and David Bouley.

He has also donated his talents and time to charitable organizations such as Meals on Wheels, Share Our Strength and Vinifair. Chef Bowles describes his cuisine as �having a minimalist approach that allows pristine foods to taste like themselves� and his style as �a blending of creativity, technique and aesthetics.�  During his free time, Chef Bowles� passion for creating continues and can be seen and heard in his paintings, music and poetry.

The Jackson House & Restaurant, a Vermont country manor, is an intimate 15-luxury property situated within the historic village of Woodstock. Nine guestroom and six suites are elegantly appointed with an array of styles French Provencal, Vermont country of Victorian and offer high-end amenities and fine linens and bath products. All suites feature working fireplaces and oversized Jacuzzi tubs.

Guests are treated to some of the finest cuisine in Vermont at the inn�s fine-dining restaurant featuring a menu created by Chef Graham �Elliot� Bowles, as well as a Wine Spectator award-winning wine list.

Opening in 2004 is the Jackson House Spa, where guest will enjoy massage therapy and an array of fitness equipment.  The inn is just a short drive from a number of Vermont�s premier attractions offering skiing, hiking, horseback riding, fishing, antiquing and shopping.
